Beet Kvass


Note: Due to the high oxalate content of beets, it is recommended to only drink a tablespoon of beet kvass per day.


Ingredients

  • 1 whole medium beet
  • 1/4 medium onion
  • 2 small slices cabbage
  • 1 T mineral salt
  • 1 t raw kefir whey1 (optional)
  • Filtered or spring water

Directions

  • Fill quart jar 1/3 full with sliced vegetables
  • Add mineral salt
  • Add kefir whey
  • Fill jar to shoulders with water
  • Lid and allow to ferment one week

  1. Adding kefir whey increases the probiotic activity of the ferment, which can cause increased die-off, so it may be advisable to only add this ingredient after your healing has already been underway for a time. ↩︎
