Note: Due to the high oxalate content of beets, it is recommended to only drink a tablespoon of beet kvass per day.
Ingredients
- 1 whole medium beet
- 1/4 medium onion
- 2 small slices cabbage
- 1 T mineral salt
- 1 t raw kefir whey1 (optional)
- Filtered or spring water
Directions
- Fill quart jar 1/3 full with sliced vegetables
- Add mineral salt
- Add kefir whey
- Fill jar to shoulders with water
- Lid and allow to ferment one week

Adding kefir whey increases the probiotic activity of the ferment, which can cause increased die-off, so it may be advisable to only add this ingredient after your healing has already been underway for a time. ↩︎
