Ingredients
- Base
- 1 lb ground elk (or other ground meat)
- 1 c unrendered lard
- 1/2 T mineral salt
- 4 cloves garlic
- Topping
- Parmesan cheese, grated
- Coconut flour (optional)
- Also:
- rendered lard, for frying
Directions
- Blend base ingredients in food processor
- Form into balls
- Coat balls with egg wash
- If using coconut flour: create mixture of coconut flour and Parmesan cheese
- Roll in Parmesan cheese (or cheese/coconut flour mixture)
- Deep fry in rendered lard (enough to cover)
- Serve with:
- Fermented mustard+sour cream mixture
- Capers
- Kraut
- Cubes of Gouda
