Bitterballen

 

Ingredients

  • Base
    • 1 lb ground elk (or other ground meat)
    • 1 c unrendered lard
    • 1/2 T mineral salt
    • 4 cloves garlic
  • Topping
    • Parmesan cheese, grated
    • Coconut flour (optional)
  • Also:
    • rendered lard, for frying

Directions

  • Blend base ingredients in food processor
  • Form into balls
  • Coat balls with egg wash
  • If using coconut flour: create mixture of coconut flour and Parmesan cheese
  • Roll in Parmesan cheese (or cheese/coconut flour mixture)
  • Deep fry in rendered lard (enough to cover)
