die-off: The release of endotoxins in the body following the destruction of certain microorganisms - such as fungi, yeasts, and bacteria - and its associated inflammatory immune response. Die-off is a form of a Jarisch-Herxheimer reaction.

kahm yeast: A white film which develops on the top of ferments and is completely harmless.

NCM: Shorthand for Natasha Campbell-McBride, MD, author of the GAPS books, and founder of the syndrome.

salt: Acceptable varieties of mineral salt, from best to less-than-best, are: Baja Gold, Celtic Grey, Redmond Sea, and Himalayan Pink are all accepetable varieties.
