Ingredients
- Gallon jar
- 2 c granulated sugar
- 12 black or green tea bags
- Herbs (optional)
- SCOBY
- Filtered or spring water
Directions
- Add a little bit of kombucha from the last batch1 to a gallon jar for your starter
- Add SCOBY
- Bring 2 quarts of water to a boil
- Just before the water comes to a boil: Add granulated sugar and stir
- Add tea bags, turn off stove, and cover
- Remove tea bags after 5 minutes
- Add optional herbs, allow to steep, then toss
- Allow the sweet tea mixture to cool2, then pour into the jar
- Fill jar the rest of the way with water and cover with a cloth
- Allow to ferment 21 days in order to remove all the caffeine and sugar
- For the second ferment:
- Add a cup of fruit
- Allow to ferment 3 more days
