Kombucha

 

Ingredients

  • Gallon jar
  • 2 c granulated sugar
  • 12 black or green tea bags
  • Herbs (optional)
  • SCOBY
  • Filtered or spring water

Directions

  • Add a little bit of kombucha from the last batch1 to a gallon jar for your starter
  • Add SCOBY
  • Bring 2 quarts of water to a boil
  • Just before the water comes to a boil: Add granulated sugar and stir
  • Add tea bags, turn off stove, and cover
  • Remove tea bags after 5 minutes
  • Add optional herbs, allow to steep, then toss
  • Allow the sweet tea mixture to cool2, then pour into the jar
  • Fill jar the rest of the way with water and cover with a cloth
  • Allow to ferment 21 days in order to remove all the caffeine and sugar
  • For the second ferment:
    • Add a cup of fruit
    • Allow to ferment 3 more days

  1. This will obviously not be possible for your first batch, which is OK. ↩︎
